*Ingredients:
°1 1/2 c(s) FLOUR
°1/2 t(s) SODIUM BICARBONATE
°1/2 tsp CHEMICAL YEAST
°1/2 t(s) SEL
°3 EGGS
°1 c(s) SUCRE
°2 tbsp BUTTER
°1 tsp VANILLA
°1 teaspoon lemon extract
°1/3 cup (125 mL) lemon juice
°1/2 cup(s) OIL
+LEMON GLAZE
°1 cup POWDERED SUGAR; plus 1 Tbsp
°2 tablespoons WHOLE MILK; I used 2%.
°1/2 tsp LEMON EXTRACT
*Instructions
Mix the flour, baking soda, baking powder and salt in the bowl.
In a medium bowl, combine the eggs, sugar, butter, vanilla, lemon extract and lemon juice.
Pour the wet ingredient over the dry ingredients and mix to smooth.
Add the oil and mix well.
Pour the dough into a well-greased 9-5-inch loaf pan.
Cook at 350 degrees for 45 min
Prepare the lemon icing by combining all the ingredients for the icing in a small bowl with a low-speed electric mixer.
When the bread is fresh, remove it from the pan and glaze over the top.
Allow the icing to set before slicing.
